Low Country No Boil
I really wanted the Low Country Boil meal without the actual pot of boiling liquid. Instead, I sautéed some shrimp, griddled some corn, and cooked up a Aidell's chicken maple sausage. Not pictured are the roasting potatoes that took significantly longer to cook than the rest of the meal. This was very simple, and we just seasoned everything with Old Bay. 


Stovetop Chili
Having this cook on the stovetop all day was almost torture! It smelled so good. I've been making this chili for years and don't really have a recipe to share. I did use ground turkey this time. Normally, I use light and dark kidney beans, pinto beans, ground beef or turkey, diced onion, diced green bell pepper, and then diced tomato and tomato sauce. For seasonings I use chili powder, cumin, salt and pepper, and then usually a dash of cinnamon.

Breakfast For Dinner
Do you guys ever do breakfast for dinner? I love breakfast foods, so this is always a favorite. Plus, it's a good way to use up stuff. I had extra potatoes and extra sausages from previous meals I wanted to use. I roasted the potatoes for about 20 minutes, scrambled up some eggs and cooked the chicken apple sausages. We started buying those Aidell sausages when we did Whole30 last year and we still love them. 


Cobb Salads with Grilled Chicken
We grilled steaks with my parents over the weekend, and I asked my dad if he would grill up some chicken for me to have for the week ahead. We make this cobb salad recipe all the time, but this time we used that grilled chicken and a Primal Kitchen dressing we had on hand. Just delicious! 


Santa Fe Salads
We've been making this Defined Dish recipe for ages - at least in some variation. This time we used the last of our leftover grilled chicken. The dressing is just awesome!

Cook With Me | This Week's Meal Plan

Meal planning has just become absolutely critical to our lives! It's always been an important element of a successful week - but now that we are in the middle of doing Whole 30, it's integral. You cannot just fly by the seat of your pants on Whole 30. (If you are interested, I've been documenting all our Whole 30 meals over on Tik Tok!)

So, come along with me as I plan this week's meals and then subsequently prepare each dish! 

To begin with, let me tell you about my secret weapon. Plan to Eat! Plan to Eat is a really cool tool. Not only does it have a calendar for you to plan your meals, but it also stores all your recipes. My favorite part is the 'import' tool. All you have to do is input the URL of the recipe you want and it imports all the details and ingredients for you. Once you have your week planned it even generates a shopping list for you. 

I already have a bunch of our favorite go-to recipes in Plan To Eat, but I am also using a few cookbooks here and there as we do Whole 30. If you are eating out, having leftovers, or using a cookbook you can make a 'note' on your schedule to remind you what the plan is. You can also use this tool to remind yourself to take food out of the freezer or something like that. 



For this week, I'm going to do a mix of favorites and new recipes. I can't wait to remake these Burger Bowls we had recently! I can't stop thinking them. In general, I like to think about what we have going on during the week before choosing what meal goes where. For example, Wednesday evenings are really tight, so I like to do something in the crockpot or something really simple. Additionally, I think about what ingredients we already have or need to use up.

After I've got everything where I want it on the calendar, I generate a grocery list. Simultaneously, I have another window in my browser open to Walmart. We have Walmart + subscription for free grocery delivery. #game changer. (I have a referral link for you too!) I'll add what I need to my cart and plan my delivery time. I usually like to get groceries on Sundays, but I feel like I've been doing a lot more shopping lately as I figure out our Whole30 routine. (and spending soooo much more on food...!!)

Here's my plan:

Sunday - Burger Bowls
Monday - Defined Dish Meatballs and Marinara with Zucchini Noodles 
Tuesday - Santa Fe Salads (I'm going to adapt this recipe to make it Whole30, but we love the original)
Wednesday - I have some Defined Dish Tortilla-less Soup in the freezer I'm going to take out. 
Thursday - Chili Lime Chicken Wings and I'm going to make sweet potato fries. This is a new recipe! 
Friday - Taco Salads! We do these once a week anyways. I just need to decide which protein. 

And here's how it went:

Sunday 

Burgers are truly one of the only things I crave, and these bowls totally scratch the itch! SO, so delicious. 

Monday

I've gotta get better at zucchini noodles, but these meatballs are very yummy! The noodles absorb the sauce really well so it's an easy way to add veggies to our plates. 

Tuesday

Change of plans! My mom had us over for dinner. She said she was cooking extra, and boy I am not going to turn down some one else doing the cooking. My parents are also doing their own version of Whole30 right now so it was no problem to eat with them. I'll save the Santa Fe Salads for this weekend! The chicken was in the freezer anyway so it won't be a problem to be flexible here.

Wednesday

Before Whole 30 I had a go-to tortilla soup recipe that I almost always had on the meal plan because it was so easy. Most of the ingredients don't fit in with Whole 30- so I was happy to find this version! It's a great soup and very easy to make. The toppings make it more interesting too.

Thursday 

Next time I'm going to make double the sauce! These were great and very sticky. If I make double the sauce I can dunk them in it after they come out of the oven. We also really enjoyed air frying some sweet potato fries, and pairing both things with this homemade Whole 30 friendly ranch dressing

Friday

Tacos are a staple over here, and taco salads are a fav! We are enjoying the Siete taco seasoning a lot. Add some fresh salsa and you've got a great dish! Nutritional yeast was something I used a lot when I was a vegetarian, but I'm using it a lot now for making dishes more cheesy.

Meal Plan With Me

I'm a week into my Whole30 diet and I have a lot of thoughts! To recap, I decided to give this a try after getting back some interesting blood work at the end of 2022. An anti inflammation diet sounded like it could help and if anything, it wouldn't hurt. I deep dived into research in December and gave myself a weeks head start with practice recipes. So, while I'm only officially a few days into Whole30, I've been eating *almost* Whole30 for almost 2. 



Side effects: 
During my practice week, I also had COVID. So, honestly, I can't say that I've experienced any of the detox symptoms that most every else does. I had no idea if my headache was virus related or sugar detox related, etc. This also helped me give everything up slowly. First, I gave up soda and alcohol, and then I did Whole30 breakfasts and lunches while using up my regular food on dinners. So, I think this approach probably saved me some major side effects. Also, I already felt like crap, so it wouldn't matter if I did.

Label Reading:
If anything, I am forever changed when it comes to reading labels. To make sure something is Whole30 compliant you must read the ingredient lists. It is SHOCKING to acknowledge what's in our food. There is sugar in almost everything. Things that shouldn't have sugar! There is a long list of ingredients that are not acceptable for Whole30, so you have to be diligent. It's no wonder so many have trouble with their weight when you see what's actually in our food. 

Breakfasts:
I'm sick of eggs already. Breakfast is definitely something I will struggle with as this month goes on. I'm doing my best to get creative with breakfast, but I'm going to tire of eggs really quickly. I've been mixing it up with smoothies, but those aren't encouraged. 

Unlearning Diet Behavior:
I feel like I'm getting away with so much. There is no calorie counting, no artificial sweeteners, and you aren't even supposed to weigh yourself until the end. It's the opposite of every diet I know. You can eat as much as you want, just as long as it's compliant. Raisins, nuts, avocados, potatoes...all things that are encouraged on Whole30, but not on other diets.

I really really love that Whole30 is free to join. Their website is full of resources, and there is a very active and helpful facebook group.

Thoughts on 1 Week of Whole30

If it's one thing I love, it's a great BIG salad! Especially in the summer. There is nothing better than some fresh veggies and not heating up your kitchen this time of year. We have a few go to recipes - but we tried two new salad recipes this past week and they are worth a share!
 
This salad is unique because the whole salad is grilled. Even the lettuce. It's just so delicious! We don't own a grill, but I found that the vegetables grilled up well on our gas stove griddle. I think you can get a similar effect in a cast iron pan as well. 


This was a salad we loved so much that we made it twice in one week. So yummy! I will say, you have to be a fan of gorgonzola because it's got a ton in the salad and the dressing is made with the cheese as well. Loved the roasted corn and the marinated red onion! 😋



Surprise, surprise, both of these recipes are from The Defined Dish. You can't go wrong with any of Alex's recipes. They always turn out divine! I really enjoy The Comfortable Kitchen cookbook, and would like to get the original Defined Dish cookbook too. 

We've been getting a Gobble box pretty much every week this summer, but I skipped it the past two weeks because the recipes just looked so-so. So that made me reach into my Plan to Eat recipes and get a full meal plan sorted out. It's always fun to try new recipes, but I do love my old faithfuls in Plan to Eat. Two Yummy Salad Recipes

Struggling to decide what's for dinner? I have been in such a rut, so to mix things up we tried 5 new recipes this week. All are from Defined Dish. You can find these recipes online, but I got them from The Defined Dish cookbook, which is free on Kindle Unlimited right now. 

There were so many recipes in the book that looked really good. I don't typically use cookbooks for meal planning. I use Plan to Eat which is a digital recipe keeper and planner. It's really easy to use Plan to Eat to import recipes from other sites, so I was very excited to be able to find these recipes online as well. (If you want to give Plant to Eat a try, you can use my link for a free 30 day trial. I really love being able to share recipes with friends!) 

Vietnamese Shredded Chicken Salad

This was so yummy and light. I think it would be an ideal summer night meal. We used limes straight from our tree which was so exciting! 


Turkey Lasagna

Holy moly. I am not a huge lasagna person, but this would make me one! It's delicious and would totally be an easy meal for company. The lemon zest in the ricotta was 10/10 a game changer. 



One Pot Hamburger Helper

I picked this recipe because I already had all of the ingredients on hand. It's simple and comforting. 


Hamburger Salad with Jalapeño Dressing 

Blake and I agreed this recipe was missing something. I think next time I will add green bell pepper and some cheese. Defined Dish recipes are mostly Whole30 so it didn't call for cheese, but I think it would have added something! Still the dressing was great and I would gladly eat this again.


Santa Fe Chicken Bowls

I can't choose between this and the lasagna for my favorite of this bunch. This was delightful! Filling, healthy and flavorful! Just for simplicity, I might just make this a rice bowl or alternatively a salad instead of both - but it really was a solid dinner! 


The real star of the show are our new pasta bowls! These are giant bowls the size of plates. I love them and find myself reaching for them almost every night. They are great for rice bowls, salads, and pastas. Super inexpensive from Amazon too

Another Amazon food related purchase are these bowl covers. I don't really buy cling wrap, so these work awesome for leftovers or transporting food!

5 Yummy Defined Dish Recipes

Publix, has the the motto "where shopping is a pleasure". While I'm super grateful that we have a great grocery store, and I'm equally thankful we live very close by - grocery shopping has never been a pleasure for me. In fact I have often felt that it was a burden. I guess it has always felt like such a production. Maybe it's because I live in a small town and you are guaranteed to run into more than one person you know there. 

When I first heard of WalMart grocery pick up, I was stoked. Order your groceries on your phone, and go pick them up? Sign me up. Well, for some reason our WalMart decided not to participate in that. So, when I saw Instacart signs in our local Publix, I was wondering if they were actually going to have that set up for this area. Skeptical, I waited it out. My sister ended up trying it one day when she was stuck home with sleeping kids and she said it was awesome. So, I decided to give it a shot! It was such a nice experience, we decided to sign up for a full year of grocery delivery!

In short, you shop for your groceries within the Instacart app or website. Then you select a delivery time and check out. Once you check out, you let somebody else to the shopping for you!

3 Reasons to Love Instacart!

There are so many reasons we love this service, and even though it's a membership we feel it's 100% worth it. Here are a few reasons to love Instacart:

We've Saved Money
The same items on sale in the actual store are also on sale within the app. We've easily added Buy One Get One items and the total is automatically updated. There are coupons to clip and weekly sales just like in the grocery store. 

Additionally, I can't tell you how many impulse items I throw into my shopping cart when I physically go to the store. When you are shopping the app or on the website I don't feel the impulse to add random items to my cart. I think it makes it a lot easier to stick to the list. Plus, when you can see your total as you're shopping I think it makes it really easy to stick to a budget. You aren't having to add things up in your head while you go down the aisles. 

For example, my weekly grocery shopping budget is about $100. We are a family of two and that includes packable lunch items and 6 dinners. I have found that when I go into the grocery store I usually spend between $120-140 (the higher number reflects when Blake goes to the store with me, hah!). Since using Instacart, our totals have been more like $80-$90. Actually under budget!

You Save So Much Time
Our lives are incredibly fully scheduled. Our grocery shopping window was already limited to either Sunday afternoons or Tuesdays at like 9pm. If we missed that window our whole week was thrown off. It sounds dramatic, but it's true. 

Instacart makes grocery shopping something that we can accomplish without sacrificing something else. It takes me about 15 minutes total to meal plan and find everything on my list. In fact it takes even less time than it did at first because Instacart saves the items you buy frequently. We are pretty consistent in what we buy so this makes it painless. Additionally, you choose the time you want your delivery. Each week is a bit different, but I have found that getting my groceries delivered on Tuesday mornings, a day when I work from home, is so convenient! 

Just a quick note on logistics: With the Instacart app you actually watch as the person shops for you and you know when they've finished. It will also tell you when they are on their way to your home. There is no 9-5 window like repair people give you. This helps you plan your day!

After you checkout Instacart gives you a total of how many hours you saved by using their service! I love to think about how much I was able to accomplish during those extra hours! 

You Aren't Sacrificing Control 
This was something I was curious about before I signed up. What if the store is out of a particular item? Or what about choosing good produce? 

After you select your items and check out, Instacart will ask your permission if certain items are acceptable substitutes should something be out of stock. For example, if they are out of organic roma tomatoes would non organic be okay? You also provide your phone number to your shopper, so they can text you if they want to confirm something is a good swap. Only a few items have been out of stock in my experience so far. If something is swapped, the price is adjusted, and you get a new receipt. 

My shopper has always chosen great produce too. I've never gotten anything I wouldn't have chosen myself! Remember you pick out what brand of an item and the quantity of the things you'd like. The shoppers pay very close attention to what you've chosen so you are going to get what you want!

Trying Brandless! First Impressions // Pugs & Pearls Blog

Brandless has been ad targeting me hard ever since I watched a Youtube video about it months ago. And then when Blake asked me if I had ever heard of it, I knew I just needed to make an order already! 

Brandless is an online store that has lots of food, beauty products and even knives that are not a specific brand. Because of that there is no "brand tax" and the prices are kept really low. In fact, everything is $3! I was also happy to see that most of the items are organic and cruelty free. 

My biggest question was about quality. Can a generic $3 item really be of good quality? I thought I'd share what I got in my first box and let you know if it's worth it!

Rating: 5 out of 5 I love these! There are really thin, but the chocolate flavor is really there. I think this would make a perfect snack when you are craving something sweet, but don't want to indulge too much.

Rating: 1 out of 5 So, I hate these. I'm not sure if it's just me though - you see I have this horrible thing with cotton balls. Touching them is like nails on a chalkboard for me. I've found that cotton rounds are usually better, because they aren't as texture-y and feel more like fabric. Now that you know the weirdest thing about me, I hope you get a good laugh at the fact that these cannot stay in my house. They are the worst. 

So, what do you think of Brandless? Would you give it a try? My overall impression is that these are great organic 'store brand' products. The quality is definitely there and I thought the prices were more than fair. I really recommend looking at the bundles on the home page! They've got some products already curated for you, like some of their best sellers. I feel like I've only scratched the surface!

My First Brandless Haul

Cooking for my husband was one of the things I was most excited to do when we got married! In fact, it's how I got started blogging. Cooking for 2 was challenging, and new! Looking for fresh recipes and trying out different cuisines is truly one of my favorite memories from our first year of marriage. 

After a few years, I feel like an established cook. I'm definitely no Julia Child, and you will never see me cooking an entire duck- but I feel quite comfortable in the kitchen. And it's one of my favorite ways to show hospitality! Having music playing, talking with Blake after he gets home from work, and chopping vegetables together is one of the best parts of the day for me.

There have been those nights when we've both had stressful days at work, we don't feel like doing anything but sitting on the couch and then I realize I didn't plan anything for dinner. The most irritating question, when you don't have an answer for it, is "What's for dinner?" 

The best solution for budgeting, dieting and stress free week nights is meal planning. Having a plan for what to cook will solve so many problems at once. I thought I'd share my top five tips for meal planning that have worked well for my family!

My Top 5 Meal Planning Tips :: Plus a sample meal plan!

1. Don't Get Fancy.
Story time: Once I found a recipe for a beautiful seafood stew. It had about 45 ingredients. One of which was a particular rice noodle, that my grocery store didn't have. I picked up something that looked similar. Well, after cooking for an hour, adding in my substitute noodles and letting it simmer for a few minutes, I came back to what can only be described as a gelatinous soup cube. It was a complete fail. We ended up at Burger King that night. Such a waste of time and food! 

When you are planning out your meals for the week, be reasonable. Are you really going to feel like cooking an elaborate dinner after your longest work day? For example, Blake and I both work long days on Monday and Friday, so those are the perfect days for easy no brainer meals. 

Also, it can be tempting to try a fancy recipe because it looks so good in the pictures. But, be realistic. Can you use those ingredients more than once? Will your family even like it? My tip is to go with a 30 minute meal with minimal ingredients. Save the fancy stuff for a special occasion. 

One more thing! I don't suggest planning out 7 meals for your week. More often than not, you will end up with a ton of leftovers that cannot be eaten. I usually stick with 5 meals, plan for leftovers and eat out once a week. 

2. Make It A Family Affiar
I don't think meal planning or cooking should fall on one person. Blake and I usually meal plan together. It's a great way to find out what your family might be interested in eating that week. Blake will usually mention something I've forgotten about, or something that he really liked in the past. It's also a perfect time to discuss your plans for the week. For example, maybe you have to work late one night, your husband gets a heads up and he knows he has to start dinner that day. Then he has the opportunity to suggest what he wants to cook that night. 

You'll have to pick a day that works for you, but we do our meal planning and grocery shopping on Sunday (typically). It's so nice to have that sorted out and done for the week. 

3. Try Themed Days
This something I've read about, but haven't implemented myself. But, I think it's SUCH a good idea and maybe it will work for you. Try having each day of the week with a specific theme. For example, Meatless Mondays, Taco Tuesdays, or Crockpot Thursdays. That way you will always have an easy outline to follow when planning. There is so much freedom for variation in that kind of schedule too. Taco Tuesdays could be: fajitas, fish tacos, shrimp tacos, black bean tacos, chicken tacos...breakfast tacos..seriously I could go on. 

4. Shop Your Pantry
I think this takes a little practice. Once in awhile I like to skip grocery shopping for a week and really try to make meals from things we already have in the pantry or fridge. This is SO good on the budget and it makes me feel good not to be wasteful.

It takes a little creativity, but you can do it! Just a few weeks ago I spent $30 at the grocery store. I was only buying supplemental ingredients to the things I already had. For example, for some reason we ended up with 2 cartons of eggs in the fridge. I decided one night we'd use the eggs and leftover tortillas for breakfast tacos. All I needed to buy was one avocado, and I'd use some leftover homemade salsa to top them off. They were delicious and it was so satisfying to know we used what we had.

5. Stash The Recipes You Like
Sometimes it's hard to be creative and try new things. I love to have a few solid recipes in my back pocket that I know 100% we both love to eat and are easy to make. A recipe binder or Pinterest are great for this purpose. Honestly, if you collected 30 recipes, you could shuffle them each month and have the easiest meal plan ever. 

I like to stick to my favorites, and maybe try one new recipe each week. Sometimes it's a miss, but I love it when I see Blake go back for seconds! 

So would you like to see how I plan, and what we have planned for this week? 

First, we write a list. I'll pull up a few browsers with Pins and think about what we already have a lot of. I use my Erin Condren notebook that I make my daily to-do lists in.

Then I transfer the final list to our fridge dry erase board. I LOVE this board. It's easy to change if necessary and we can see at a glance what we have planned. It also helps me remember what to take out of the freezer in the morning. When I was transfering my meal plan to the dry erase board this week, I reconfigured the days a little so that they made more sense with our schedule for the week.

This week I went with:
Monday - Tacos (usually we do black bean tacos)
Tuesday - Pasta using my homemade sauce
Wednesday - Sushi Bowls (a fav!) using this recipe, adapted. 
Thursday - Chickpea Taco Salad using this recipe
Friday - Vegetarian Gyros using this recipe
We plan to eat leftovers on Saturday and eat out on Sunday. Although that's completely flexible, because someone may invite us out on Saturday, and in that case we'd just do leftovers Sunday. 

I make our grocery list in Wunderlist, and Blake and I will go to the store together. Fun fact. We definitely spend more money when he goes to the store with me, but I enjoy his company so I will deal with it.
