Queso Smothered Chicken over Orzo

Serves 4
Marinate 2-4 chicken breast in a Mojo marinade for at least 30 minutes, over night is even better.
Grill your chicken until no longer pink.
While chicken is grilling you can prepare your orzo. Cook 1 cup orzo according to package directions. Stir in 2 tbs tomato paste and 2 tsp chili powder, fluff with a fork.
Mix 8 oz diced Velveeta cheese with 1 can Ro-Tel tomatoes with green chilies in a medium bowl. Microwave for about 1 minute until all the cheese is melted. Stir.
Place 1/4 orzo on a plate, top with the grilled chicken and pour cheese dip over both. Enjoy!
