Since sharing my meal planning tips, I thought it'd be nice to share a real life's week of recipes! I have to apologize in advance because I am the worst at following a recipe, so most of the time I'm making it up as I go along. So the meals here don't really have an exact recipe to go with them, but I'm going to do my best to share a general outline of how I made them! Hopefully this gives you a little inspiration as you plan your meals this week! 

We are currently eating mostly vegetarian, but with occasional seafood as well. 

Blackened Fish Tacos
We do tacos at least once a week. In reality I could 100% eat them every night and be completely contented! Typically, we do black bean tacos, but shrimp tacos and fish tacos are also in the rotation.

The fish is super easy to whip up. I take 2 tilapia fillets and pan fry them in olive oil. I season both sides with Zataran's Blackened Seasoning and lime juice. Once they are cooked through, dice the fish up. Our typical taco toppings include avocado, tomato, shredded lettuce, cheese, cilantro, sour cream, lime and these tortillas that I swear by.

Lazy Falafel (alternatively Greek Nachos)
I absolutely love falafel, but it can be sort of tedious to get the patties right. A few months ago we had friends over and my falafels fell completely apart in the pan. I apologized for the weird meal, but to my surprise it was actually great and she asked for the recipe! It was sort of deconstructed falafel. So ever since then, I just roast chickpeas and call it lazy falafel.

First, begin by marinating red onions, cucumber and diced tomatoes in italian dressing. Toast a pita, and create a pocket. Fill with roasted chickpeas, cucumber salad and tzatziki sauce. I make my tzatziki sauce with plain greek yogurt (Fage is the best by far.), diced cucumber, fresh dill, salt, and lemon juice. 

Totally laughing at myself, because I made falafel even laizer when I went back for seconds and made greek nachos! It was so delicious and worth sharing! I think it would make a great appetizer.

Plain ole Pasta
I happily shared my homemade pasta sauce recipe here before! It's too easy and so much tastier than store bought sauces. We do pasta probably once a week, because it's so simple. Paired with garlic knots and a side salad-you can't go wrong.

Breakfast For Dinner
Breakfast foods are so comforting! We only seem to eat them when we have company! Every once in awhile I will insist on chocolate chip pancakes or waffles. This week we also really enjoyed farm fresh eggs! Our friend has some very happy chickens who have been laying eggs like crazy. I don't know what it is, but these eggs are so much better than normal. They are much yellower too!

Blake eats mainly vegetarian with me happily. He does tend to order meat dishes at restaurants, but occasionally he will request something for dinner. So we added bacon to this meal for him! 

So, what do you guys eat on your pancakes? My mom always had us top ours with peanut butter, and I can't eat them any other way! (We always got car sick, so she'd try to fill our bellies to the max to avoid it. In fact I had a peanut butter sandwich every day of elementary and middle school. Probably couldn't do that now with kid's allergies. And that's the story of my life long peanut butter addiction.)

Watermelon Feta Salad
This was a bit of an experiment, but it paid off in a big way! Recently, I was at one of my favorite restaurants for lunch, and the woman at the counter talked me into trying their new salad. I went for it because I was feeling guilty about always ordering the same thing. Anyway, it was so delicious I knew I wanted to recreate it at home! Plus, it felt amazing to be using lettuce and basil from my garden. (Perfect timing with that lettuce recall too!)

To make this salad, just add chopped lettuce, torn basil, red onion, watermelon chunks, blueberries and feta cheese. I made my own dressing with olive oil, white balsamic, dried italian seasoning and chopped garlic. 

This is the perfect salad for summer because it's so refreshing! The salad at the restaurant also added candied pecans. I found that this was the perfect dinner on a night when I wasn't very hungry and just needed something light. It will make a great side to another dinner when we are feeling more hungry.

As I mentioned in the meal planning post, we usually plan on 5 meals a week. That gives us plenty of flexibility and helps cut down on food waste. We are trying a new experiment this month though, that I may have to update you about! April was of the busiest months for us in a long time, and after floundering a little bit at the beginning, we came up with a strategy to help us with dinner time-just to take some of the pressure off in whatever ways we could. We made an entire month's meal plan! That's right, 4 weeks. We are currently starting week three of that. Comedians In Cars Getting Coffee
Jerry Seinfeld is so hilarious. I appreciate his cleaner sense of humor, and that he is so relatable! In this show, he picks out a cool vintage car, picks up various other comedians and takes them out for coffee. It's like a talk show, but I feel like you really get the sense of who these people are in real life. Plus they are all really funny people! If you don't watch any other episodes, watch the one with Steve Harvey! 



Nailed It
Fun fact: My husband and I LOVE cooking competition shows! We randomly clicked on Nailed It a few weeks ago and we found it hysterical. The bakers are normal everyday people and they have to try to recreate a professional's dessert. The end results will bring tears to your eyes-it's just too funny. If you don't watch any other episode, just watch #3!



Lost In Space
I didn't even realize this was in the works until I saw it featured on Netflix's main headline. Blake told me it was a tv show way back when, but I only remembered the terrible Matt Leblanc remake in the 00's. Anyway, this is SO well done. It's exciting and visually really cool. We almost watched the whole thing in one sitting! It was a super rainy day on Sunday, and all our plans had been cancelled. You don't get that luxury often! Episode one is stellar, and you do not have to like sci-fi to enjoy this show either.

Oh, Amazon. I don't know what I do without you! Living in a small town really limits your shopping options, so I'm very thankful for that quick two day shipping for anything I might need in a pinch. It comes in handy so often!

Blake and I both started Wish Lists for a funny reason actually. It was probably our 2nd anniversary, and I had no idea what to buy him. Blake is very particular about what he likes. I can either totally nail a gift, or quickly realize he is never going to use or wear whatever it is I buy him. I had him whip up a quick list so I knew exactly what he was hoping to get. (This is especially helpful if your recipient wants a particular electronic.) 

Since then, we've both kept up an Amazon wishlist! I've even gotten some of our family to make them up as well, and we've saved their lists to our dashboard so we always know what to buy on special occasions. (I personally don't feel like this takes away any surprise. They still don't know what you are buying, but also guarantees they will like it.)

Anyway, I thought it'd be fun to share what's currently on my list. I'm always curious to see what other people are buying or saving up to buy!

Starting my list off with the most expensive item first! I've been learning to sew, and one day I'd really love to get my own machine. I've picked this one for a few reasons. Brother is a good brand, and I really love that this has a monogramming feature. 
These are kinda pricey, which is the main reason I haven't bought them yet. I usually pick up a cheap pair of slippers off Groupon every fall, but they really don't hold up. I'd like to invest in a great pair that I can keep wearing. I love the color of these and that they have a hard sole for when I have to take the dogs out in the morning. 
We love watching cooking and baking shows! Recently, we were watching a baking competition and they used these attachments to make ice cream. It was SO cool, and I instantly added one to my wish list. 
I'd really love to get a copy of this cookbook. It's plant based recipes, which really fit our lifestyle right now! I'm mostly interested because these recipes seem uncomplicated. The author is in London, so I sort of wonder if the measurements will need converting. But at less than $15, I think I'd be willing to try it.

Almost as expensive as the sewing machine, but I really have my eyes on these headphones! I have weird ears, and earbuds have never ever worked for me. I was so excited when over the ear headphones came back in style, and I have a cheapy pair that have worked just fine. A nice pair of noise cancelling, wireless headphones would make me so happy though!


It might be the most boring thing on my list but it's something I think about getting all the time! Using paper towels to dry your lettuce it just so time consuming. Especially now that my garden is taking off, I really would love to get a salad spinner.
My dream home definitely includes a bigger bathtub, but for now my standard tub works fine. I'd love to get this caddy to hold my tablet or a book while I soak!
Gosh, I think this tripod arm would be so helpful for blog photos and for photos for my Etsy shop! I find it so hard to hold my arm steady in awkward positions. It would save quite a bit of time if I could line up a shot and get it over with-instead of trying a gazillion times to take a picture without my eye in the viewfinder!  


These are probably going to stay on my wishlist until I can find a good dupe! Last summer I found two pairs of shoes at an outlet that look exactly like the standard Jacks. But, I really really really love the style of this sandal and the color of course. (These are a shoe you definitely can't buy used either! The shoe gets a big dark foot mold of the person who wears them.)


This is the shower head that we installed in our guest bathroom. We adore this shower head so much, and I really would like to get a second one for our master shower. It's really easy to install too. It just attaches to the regular shower head pipe, and you glue the bottom half attachment down with silicone. So luxurious and fun! Plus, It makes dog washing a dream with that hose!
Quite glamorous, huh? Truthfully though, I would love to start composting. We did it growing up, and while it was sort of an experiment, it really did help our family cut down on waste. I recently read that a lot of things that could decompose easily, can't because they are mixed in with other household waste that doesn't decompose. This composter looks easy to use, and I think it would work well in our backyard. Plus, if it works I will be able to use it in my garden!

My very first race was the Springtime Tallahassee 10k in 2007. My aunt Mary had started getting into running and convinced us all to sign up. We had NO idea what we were in for. I was 17, so I was able to run with youthful energy for awhile. What you need to know though, is that Tallahassee is very hilly-and this race route is through some downtown areas that I avoided when I drove my stick shift. It's a very challenging course, so to make it your first race is kinda crazy!

I remember sitting on my front porch with my cousin Brandon (to the left of me in the picture) after that race and thinking I'm not going to be able to get up! After that year they added a 5k route to the same race, and we did that faithfully for a few years. I moved away in 2010 when I got married, but I still tried to run it with my parents a couple of times. It's a really popular race, so there are tons of people running with you and there are a lot of vendors at the afterparty. Plus the Springtime Tallahassee parade is a great tradition to watch while sporting your race bib. 

This year, my mom and I have been run/walking together twice a week. She is killing it right now. She has lost a lot of weight and is loving her Orangetheory classes. My mom said that she never thought she would be able to run. We've been using the C25K/C210K apps, and they are a game changer! On the app, you select which day you are on and it will guide you through your run with voice prompts. 

The 10K was still very hard! But, we ran the first mile easily because it's downhill. After that we turned on the app and ran together. It's great because the walk breaks allow you to catch your breath. I never would have been able to run such a big portion of that race without doing it like that. You can do anything for 90 seconds! 







Gosh, it was so humid during the race! They actually had to move up the start time, so that the parade could start earlier too. Just as predicted, the rain poured at 11 am! April showers, I guess. Either way, it was so fun and I was just SO incredibly proud of my mom. She has inspired me a lot lately, especially because exercise has not been a big part of my daily routine for a while.

I know I'm not the only one who loves finding new treasures in the aisles of Target! I hardly ever get to go and just browse. I actually usually avoid doing it because I don't want to end up with things I don't need. But, I have 3 new favorite beauty products you can find at Target, and they are definitely worth sharing. 

In an effort to ditch chemically and toxic products in my home, I really cut back on anything with fragrance. In fact, most perfumes and body sprays give me a headache! However, I did miss having some sort of scent. (Especially since my natural deodorant journey is still experimental! ha!) 

I found these perfumes in Target, and was immediately intrigued. These perfumes are minimal ingredients, and the fragrance comes from essential oils. Plus free of a lot of other junky stuff. I LOVE the Daydreamer scent! It reminds me of what I wore in High School-which was Victoria's Secret Endless Love (I think). It comes in a spray, but I'm really digging the rollerball. (Their packaging is so cute too. I totally admit to being drawn in by that alone.)

Yes To PrimRose Oil Mud Mask
Who doesn't love a good face mask? I love them, but this is the first one that I've actually seen a real difference in my skin after using it. Yes To has a ton of different masks, but I like that this one visibly reduces redness. I bought a couple to have on hand for those nights when I want to relax in a bath.

Essie Spring 2018 (Anchor Down, At The Helm, Perfect Mate)
My nail polish collection got out of hand a few years ago, so I really pared it down to just a few trusty colors. I haven't been tempted to buy anything new in a long time. The Essie Spring 2018 was calling my name though! I love all the colors, but fell in love with these three. Perfect Mate is the PERFECT peachy pink. Anchor Down is a very cool shimmery navy. And I've had a major thing for orange this year, so At The Helm was an easy buy as well!

Keeping my nails painted is the only way I keep from biting them, so I've been steadily painting them every few nights. It's been awesome to have a few new colors in the rotation.

Absolutely one of the main sources of joy of my life is being an aunt! Blake and I would like to have kids one day, but we aren't quite there yet. Our niece and nephews are SO much fun and we love them to pieces. They definitely fill the void. I'm so excited to add another nephew to that list of little ones who have made my heart's capacity bigger. 

Lennox Reid Johnson was born on Monday, April 2nd. Boy, is he perfect. I had a lot of fun taking pictures during his first few hours of his brand new life! I can't believe how tiny he is compared with his big brother.
