One of my favorite recipes to make is Chicken Enchilada Soup. We eat it all the time, and it is so easy. One of the reasons it is so easy to put together is because of this tip that I came across regarding shredding chicken. Most recipes tell you to shred with two forks, which is awkward and can be exhausting for your wrists. I can't believe it took me so long to learn that all you have to do is throw the cooked chicken in your stand mixer on low for a few minutes. You get perfectly shredded chicken with zero effort. If you don't have a stand mixer, it would be just as easy to throw in a bowl and use a hand mixer.
