Pinned It: Guacamole Sliders

It's been quite a while since I've posted any recipes! When I originally started blogging, it was to share my experience as a new wife trying to cook for her husband. Actually, I think that was the hardest part of getting married, at least for me. The meal planning, the shopping and learning new techniques... Basically I learned that the simpler the recipe, the better! 

We have quite a nice recipe collection of tried and true dinners, but sometimes I try to mix it up a little with something new. Pinterest is such an amazing tool for discovering things to try. I want to start a new blog series about the recipes I've pinned and actually ended up making, and of course liking.

Last week we tried this recipe from Little Broken. Anything with guacamole has my heart already, but I definitely wasn't expecting to love this as much as I did. 


Here's what you do:
30 minutes ahead of time, marinate the following in a resealable bag:
- 2 Chicken Breasts (cut in half)
- 1/2 Cup Chopped Cilantro
- The Juice of 2 Limes
- 1/2 Olive Oil
- Salt and Pepper To Taste

After marinating for 30 minutes in the fridge, grill the chicken until no longer pink. Meanwhile, make the guacamole by mixing the following: 
- 2 Avocados
- 1 Large Seeded Diced Tomato
- 1/4 Diced Red Onion
- 3 Tablespoons Chopped Cilantro
- The Juice of 1-2 Limes
- Salt and Pepper To Taste 

Toast Slider Buns, and then assemble with the grilled chicken, topped with guacamole! That's it! Enjoy! 

This made 4 sliders, but the original recipe serves more. We served our sliders with homemade sweet potato fries! The best part was the leftover guac! It wasn't leftover for long because I finished it up with some tortilla chips. Overall this recipe gets 5 stars from me. It's simple and really good. Can't go wrong with fresh guacamole anyway.

  1. That looks delicious! I would definitely dip that in some Sriracha. I actually use pinterest for all my recipes now. I add the ones to my boards that Ive tried and want to keep and then I'll delete the ones that aren't very good.
