Crunchy Asian Salad

Preheat your oven to 375* 

Toss 1 lb diced chicken with 2 tablespoons honey. Pour 1 cup bread crumbs in a shallow dish, and coat each piece of chicken with the crumbs. Place chicken in a glass baking dish, and bake for 20 minutes or until cooked through. 

Meanwhile to make dressing whisk together: 
1/2 cup plain greek yogurt
1/3 cup rice wine vinegar
2 tablespoons honey
1 tablespoon Dijon mustard
1 teaspoon soy sauce
1 teaspoon sesame oil 
2 tablespoons olive oil

Assemble salad: 
4 cups chopped lettuce
4 sliced mandarin oranges 
1/2 cup chopped almonds
1/3 cup chopped scallions
1 cup dried chow mein noodles
Add cooked chicken, and pour desired amount of dressing on top!
