Salmon Avocado Salad
One of my favorite things to make in the summer are salads! This one is so light and delicious. Next time I will buy just one salmon fillet, and we can split it! This was a huge salad!

Only make this if you want to eat the entire bowl. It's incredible and impressive, even with just a few ingredients. We had this for dinner and just ate it with chips. You could do tacos, or serve it over a salad. Ah-mazing.

Air Fryer Falafel
Say hello to the recipe I will be making every week for the rest of my life. I have been trying to perfect falafel for years! This recipe was so simple, and it turned out perfectly! We served with pita and homemade tzatziki sauce. I love using our air fryer, and it did a great job with this recipe. Also, I should mention, I rarely follow a recipe to a T, but I absolutely recommend following this one. No changes necessary. This would be a great thing to meal prep for lunches!
