Everyone needs a good casserole recipe. This is one that I love to make, because of it's sheer simpleness and portability. I have often made this for families who have had a death in their family, or have been sick. It is quick to throw together, and everyone loves mac and cheese!

Chicken and Broccoli Mac & Cheese
Serves 4
Start by preheating your oven to 350*
In a glass baking dish, season 1 large (2 small) chicken breast with salt and pepper and olive oil. Bake for about 20 minutes, until no longer pink. It may be necessary to cut chicken breast in half for thorough cooking.
Meanwhile, cook half of a box of macaroni according to package directions. Drain and set aside.
Steam 1/2 lb of frozen broccoli in the microwave. (You may be able to steam in the bag or cover a bowl with plastic wrap that has holes poked in it for about 3 minutes.)
Shred cooked chicken with a fork.
In a large bowl mix the pasta, shredded chicken, broccoli, 1 cup shredded cheddar cheese and an 8oz jar of alfredo sauce.
Pour mixture into glass baking dish (use the one you cooked the chicken in!) and sprinkle more shredded cheese on top to cover.
Bake for 15-20 minutes until all the cheese is melted and casserole is fully heated.
