Egg Nogg Cupcakes

Makes about 48 mini cupcakes
Inspired by:
Preheat oven to 350’. Line pan cupcake liners. 
Beat together 1 box of vanilla cake mix, 3 eggs, 1 cup of eggnog, 1/3 cup of vegetable oil, 1/4 cup sour cream, 1 tablespoon rum, 1/2 teaspoon nutmeg for about 3 minutes. 
Fill the liners 2/3 of the way full and bake for about 20 minutes. Cool completely before icing!
After icing, dust with nutmeg, and refrigerate! 
How to make Butter Cream Icing:
Beat together 1/2 cup butter, 1/4 cup shortening, 2 ounces of cream cheese(softened). Stir in 1 tablespoon rum and a pinch of salt. Slowly beat in 4 cups of powdered sugar. After all sugar has been added beat in 1 tablespoon whipping cream. Keep refrigerated!
Oh my goodness these are FABULOUS. Melt in your mouth good. My house smells so good after baking these. Mini cupcake tins were the greatest invention. We can have our cake and not feel bad about it. Just the perfect amount of sweetness.
