Chicken Arugula Pasta

Serves 4+
Inspired by: 365 Meals Cookbook by Ikea

Preheat your oven to 350*

Season 2 chicken breasts with salt, pepper, dried basil, and dried oregano. (to taste)
Place in a glass baking dish, and drizzle with olive oil. Bake for about 20 minutes, until cooked through. 

Cook your choice of pasta according to package directions. I have used Penne or Rigatoni. 

In a skillet melt 1/2 stick of butter on medium low heat. Add 1 tablespoon minced garlic, and 2 diced tomatoes. Let simmer. 

When pasta is cooked and drained, return to pot. Stir in tomato mixture and add 2 cups of arugula to the pot. Also dice your chicken and add to the pot. 

Top with freshly grated Parmesan


This is very light for a pasta dish. Especially if you subsitute the butter for olive oil. This is a fairly quick dish to throw together, and tastes so nice. I really like the flavor combination-and oh that garlic!
